Reviewing the State of Meat Colour Measurement Technology

Reviewing the State of Meat Colour Measurement Technology

This review looked across instrumental colorimeters, hyperspectral imaging and computer vision systems used to measure meat colour and quality, comparing their accuracy and real-world practicality. The newer imaging and computer vision methods it covers now reach over 90 percent accuracy in detecting quality changes, well beyond older handheld tools. Contributing to work like this keeps our quality measurement knowledge current, which matters just as much when verifying a fertilizer batch as it does a food product.
